Atria University student volunteers design a soil-less farming monitor

Bengaluru (March 8, 2020): Driven by the commitment to help the environment and encourage sustainable living, Atria University team, with student volunteers, has designed a ‘Hydroponics Monitor’. ‘Hydroponics Monitor’ is nothing but an IoT-based monitoring device to monitor the plants and nutrient supplements.Atria University student volunteers design a soil-less farming

Hydroponics is a farming technique where plants are grown in water and nutrients, without the help of soil. This method of farming will get more yield than soil-based agriculture and also helps reduce the use of pesticides. Hydroponics Monitor can be set up at the workplace or home easily, according to the Atria team.

To make the world greener and healthier, the team has worked to bring the best of Internet of Things (IoT) and Deep Tech through Hydroponics Monitor. With an interdisciplinary approach, the project strives to improve the health and standard of living. It efficiently provides a sustainable solution to food supply and food quality issues.

Kaushik Raju, Director, Atria University, lauded this project and said, “We came up with the hydroponics lab to work on two main problem statements that we are facing as a society — water and wastage due to transportation. Hydroponics helps solve these issues as it uses less than 25% of the water required in typical farming on land. You can grow the produce closest to the consumption eliminating storage and transport challenges, which also leads to the best nutrient-rich produce without the need for harmful pesticides. At the University, we plan to set up hydroponics with the aim to prove internal consumption for our hostels and students can be grown right here by utilising our dead spaces.”

The hydroponics monitor was designed by a five-student volunteer team working with Atria University—Anil T, Dinakaran P, and Ashok Patel from Electronics and Communication Department as well as John Karamchand and Surya Murugan from Computer Science engineering.

Speaking about this project, John Karamchand, a team member said, “We were always fascinated by the potential impact of technology in the domain of agriculture. We came across a few hydroponic farms in our locality that faced problems due to labour-intensive processes and lack of real-time monitoring. This motivated us to pursue building a solution that enables everyone to manage and run an urban farm with the least human intervention possible.”

Changing dynamics of admission process in Indian universities

Bengaluru, 8 March 2020: In what seems like a welcome change in the higher education system in India, universities are focusing on the non-academic profiles of students more than their academic histories. Setting a precedent for other universities, Atria University, Bangalore, has an admissions process that focuses on the student’s life story and looks at their unique qualities beyond just marks.

Atria University

At Atria University, the admission decision is not based on high-school exam cut-offs or standardized test scores. The admission process seeks to identify the student’s potential to match and uphold the qualities of the community. The University values qualities like passion, rigor, curiosity, the ability to learn, self-awareness, general awareness, and a cooperative spirit in a successful candidate. The University believes that each student has distinct views, interests, and ambitions. These should influence their higher education choices, and not traditions and social constructs. The admissions process is a three-step one: online application, student engagement and interaction day, and admissions decision.

Sunder Raju, Founder, and Trustee, Atria University, says, “Atria University is attempting to address the challenges of the future by stitching together disparate learnings into a single holistic process. Distilled to its core, the underlying theme is“Learning to Learn.” We are creating citizens of tomorrow capable of navigating the fast-paced disruptions the future portends.”

According to Shaheem Rahiman, CEO, AtriaUniversity, “We are at a watershed moment in the evolution of our society and the environment. The new world order is being shaped by technology, design, and innovation. The next generation must prepare itself in a completely newmanner if it wants to survive, thrive, and find meaning in the emerging future.Mainstream higher education systems are falling short in preparing our next generation for the 21st century. These changing times demand a change in higher education.”

Atria University, Bengaluru is currently awaiting its State Private University status and is set to redefine the paradigm of higher education in India. Atria University’s approach to learning includes flexible learning pathways, interdisciplinary majors, sprint-style learning, industry experience and project as well as peer-to-peer appraisal.

Why Blocking Of Road At Shaheen Bagh Was Allowed?

Why is it that even after more than 81 days the blocking of road at Shaheen Bagh in Delhi is continuing uninterrupted since 15 December 2019? Why is it that Centre allowed this to happen? Why were they not promptly evicted?

Why rule of law was allowed to be flouted with impunity by the Centre? Should we be proud of it? Will this not inspire others also to follow suit?

shaheen-bagh
shaheen-bagh

Why were the potentially dangerous consequences not thought of seriously by the Centre of all this leading to huge resentment among the rest of the people which finally culminated in violence and riots which has left nearly 50 dead and there are many more who are still battling with their lives? Why Centre allowed again blockade at other places also which ultimately culminated in horrifying riots that has sullied our image in front of the world? Why Centre kept watching all this like a mute spectator?

What message has been sent? Why women have been allowed to block the road in the name of protest? What sort of protest is this that you put other people to maximum inconvenience?

How can this be justified under any circumstances? Why is it that Supreme Court instead of ordering the immediate eviction of blocking of road which is a national highway and connects Delhi and Noida decided to just condemn it and ordered the setting up of a high powered Committee comprising of senior lawyer Sanjay Hegde and Sadhana Ramachandran to engage in talks with those who have done the illegal act of blocking road? What precedent has the Supreme Court set?

Why Supreme Court didn’t order them to immediately move to some other location so that the common person is not disturbed in any way from moving from one place to another? It cannot be justified under any circumstances! It will only serve to encourage others to follow this same extremely dangerous and diabolic route which is bound to have disastrous consequences for our nation!

How can any sane person justify what Solicitor General Tushar Mehta told the Supreme Court that Harsh Mander who is a former IAS officer said openly that, “We have seen the track record of the Supreme Court. We have no faith in Supreme Court but we will still have to go. But ultimately, justice will be done on the streets?” Mehta was referring to Harsh Mander’s long controversial speech in Hindi, allegedly made at Jamia Millia Islamia University on December 16, 2019. He also said that, “Ye ladai sansad mein nahi jeeti jayegi. Yeh ladai Supreme Court mein bhi nahi jeeti jayegi. Wahan koshish zaroor kareenge, hamara Supreme Court hai. Lekin faisla na sansad mein na Supreme Court mein hoga. Is desh ka kya bhavishya hoga, aap log sab naujawan hai, aap apne bachon ko kis tarah ka desh dena chaahte hain, ye faisla kahan hoga, yeh sadkon par hoga”. This cannot be justified under any circumstances because if everything is decided on roads by creating more and more “Shaheen Baghs” then even God cannot save this nation from being plunged into more and more riots! Can we afford this?

Every Indian and every sane person on earth is shocked that how can anyone be allowed to block roads? How can they be allowed to block the road for such a long time? Will others not feel encouraged to follow suit?

Will tomorrow blocking of bridges, blocking of railways, blocking of airports also be justified similarly in the name of dissent? Will Supreme Court set up Committee to talk with them also? What sort of dissent is this? What trend has been set? It is beyond my comprehension!

You put other people to maximum inconvenience and justify it in the name of “dissent” and are allowed to do so for more than 81 days continuously! None other than Supreme Court sets up high powered Committee and accords VVIP treatment to those protesting at Shaheen Bagh which is still mocked at and the street protest continues unabated! The Apex Court said that it had perused a report submitted by the interlocutors deputed by it to negotiate with the protesters at Shaheen Bagh and added there are “too many ifs and buts” in it.

The Apex Court declined to pass any immediate direction saying “the environment is not conducive” and deferred the hearing to March 23.” What ensued in between was the deadly and ghastly riots which has shocked the world!  I fail to understand that why did the Supreme Court procrastinate by setting up Committee to talk with them and not order their immediate removal from road at Shaheen Bagh to some other place so that the traffic is not blocked? This obviously encouraged others to follow suit and what followed was worst riots since 1984 right at the heart of Delhi!

It must be pointed out here that when Justice KM Joseph pointed out that, “Look at the way the police in the UK or USA function. They (USA, UK police) do not have to wait for orders to act.” Pat came the reply from the Solicitor General Tushar Mehta that, “If the police here start working like the police in USA or UK, this court would be the first institution to come in between.” Mehta has a valid point! The Apex Court must introspect honestly on this!

No jurist and no Judge whether of High Court or of Supreme Court can ever justify such dissent because this is a crime and not dissent. Dissent has to be peaceful and it cannot be by blocking of roads and by chanting anti-national slogans of the worst kind and propagating to fulfill the dream of Jinnah to further break this nation to more pieces no matter how many Judges and Jurists may try to justify it one pretext or the other!

It is not for nothing that none other than Kerala Governor Arif Mohammad Khan while criticizing and condemning the brazen and undemocratic blockade of road at Shaheen Bagh minced no words to say that people sitting on roads and disrupting normal life to force their opinion on others is a form of terrorism! He was unequivocal in advocating that, “Aggression doesn’t come in the form of violence only. It comes in many forms…If you won’t listen to me, I will disrupt normal life. Dissent is the essence of democracy. There is no problem with that. But five people sit outside Vigyan Bhawan and say that we shall not move from here unless this Parliament of Students adopt a resolution which we would like them to adopt. This is another form of terrorism.” Who can deny or dispute this? No one!

I must recall here that my best friend Sageer Khan once while returning from mosque in 1993 looked disappointed. I asked him the reason. He said that there was no space inside mosque and he would never offer namaz on road as he never wanted to do anything by which another person faces problem! He was not prepared to be on road even for a short time as it would cause inconvenience to others! Now see that, on the contrary, what is actually happening at Shaheen Bagh! Shamelessly blocking national highway since last more than 81 days and yet not going away! How can anyone justify this on any ground? How can any country where “rule of law” is followed ever allow this under any circumstances?

Why Centre and Supreme Court have allowed this Shaheen Bagh to fester for so long? Why this case has not been decided at the earliest? Why Supreme Court by choosing not to pass an order of eviction from illegal occupation, but instead merely observing that roads are not meant to be indefinitely blocked for protests has left everyone hanging as pointed out in editorial titled “An immediate recourse needed” in Hindustan Times dated February 27, 2020? Supreme Court certainly has not covered itself with glory by not ruling decisively on this most promptly and its dilly-dallying approach only served others to hold more such protests at other places which finally culminated in many more such protests and which eventually resulted in riots and killings claiming nearly 50 lives and leaving more than 200 injured!

Faizan Mustafa who is Vice Chancellor of NALSAR University of Law, Hyderabad has also minced just no words to point out in ‘The Indian Express’ dated February 28, 2020 that, “By not hearing petitions on the constitutionality of the CAA, not taking cognizance of the inept handling by the Delhi Police of atrocities against the students, the Apex Court has overlooked the gravity of the situation.” Kapil Sibal who is a former Union Law Minister and also an eminent and top lawyer of Supreme Court too lamented that, “The judiciary has also not responded with alacrity and the kind of sensitivity expected of it. There was a time when it would have suo motu taken up the issue and ensured that engineered violence of this kind was dealt with expeditiously. In an age when the social media is replete with images that act as evidence, the courts could easily have taken up the matter, asked for a response overnight and ensured that possible acts of violence were nipped in the bud.” He also rightly pointed out that, “Nothing prevented the judiciary from suo motu taking action for the kind of speeches that were made with the intent to incite.”

It needs no rocket science to conclude that the protesters cannot sit on a public road or a public airport or a public rail track and cause blockade of cars or bus or train or aeroplane or helicopter! Just because they carry national flag or a copy of Constitution will not justify their illegal acts under any circumstances! This is what the Centre as also the Apex Court too has failed to appreciate! If they had appreciated then there would have been no blockade at Shaheen Bagh or at any other place under any circumstances!

When law applies equally to everyone then how can few women be allowed to publicly block national highway and public road as we saw shamefully in Shaheen Bagh? Why was it allowed to happen at the first place? Every person has right to protest but it cannot be by blocking of roads, blocking of rail tracks or blocking of airports etc!

This is what Supreme Court too apart from Centre has miserably failed to convey to those who are protesting at Shaheen Bagh! Attempts were made to replicate the same at Jaffrabad and other places and even metro rail stations were blocked and this resulted in clashes which should never have been allowed to take place at the first instance! Law has to be same for everyone and anyone who blocks roads must be made to evict it!

If police kowtows in front of them helplessly as we saw in Shaheen Bagh then they are bound to feel more emboldened and this only serves to create unrest in the place where roads are blocked as we saw in Delhi! What emboldens them most is that even Centre and Supreme Court do nothing to ensure that they are promptly removed from their illegal occupation of road connecting two states and two important cities – Noida and Delhi! What does it all boil down to? Huge violence on an unprecedented scale which resulted in the untimely loss of nearly 50 people till now apart from huge destruction of vehicles, property and buildings! Can our nation afford this again? How many times?

International Women’s Day and its relevance

International Women’s Day
International Women’s Day

Whenever the discussion on International Women’s Day arise, Indians believe all days are meant for women as many Indians particularly believer of Hindu faith perform puja in the form of Kali or Durga or other form of deity. Devotion of Ramakrishna to Kalimata in Dakshineswar Kali Temple is known to all. His great disciple Swami Vivekananda had great respect towards women. On 30 September 1893, an interview of Swami Vivekananda was published in the Boston Evening Transcript. In that interview he was asked if he had a plan to get married. Vivekananda’s prompt reply was— “Why should I marry, when I see in every woman only the divine Mother?  To emancipate myself from earthly ties and attachments so that there will be no re-birth for me. When I die I want to become at once absorbed in the divine, one with God. I would be a Buddha.” Swami Vivekananda considered Sita as the ideal Indian woman. He also told, “The ideal womanhood of India is motherhood— that marvellous, unselfish, all suffering, ever-forgiving mother.” He understood the day India started neglecting their women, the downfall of the nation would start.

Anyway International Women’s Day is celebrated every year on March 8 to honour women for their enormous service to mankind. It is also known as the United Nations (UN) Day for Women’s Rights and International Peace. A woman is a mother, sister, wife and finally torchbearer of the human civilization as without a mother male, female or even transgender cannot see the light in this world. Unfortunately, in many places, women are victimized in different ways in the world. One of the reasons is that they are not earning so do not have much say in the family, whereas in all religions woman has got important position. Hinduism has the strongest presence of the divine feminine from ancient times to the present.  The Goddess is viewed as central in Shakti and Hindus perform Puja in the name of Durga, Kali, Saraswati and others. Although in Hinduism, there are different names of Goddess or God but God/Goddess is one.  In the Holy Quran, it is stated that all humans are equal: “To whoever, male or female, does good deeds and has faith, We shall give a good life and reward them according to the best of their actions.” (16:97). Mother Mary is most respected by Catholic Christians of the world. In every Catholic Church, Mary’s portrait can be seen along with Jesus. According to Sikhism, women are equal to men. “Guru Nanak proclaimed the equality of men and women, and both he and the gurus that succeeded him encouraged men and women to take a full part in all the activities of Sikh worship and practice”. So it is evident that women are respected in different religions also.

In the context of International Women’s Day it is pertinent to mention that, following the decision agreed at Copenhagen in 1911, International Women’s Day was honoured the first time in Austria, Denmark, Germany and Switzerland on 19 March 1911 where   more than 1 million people in Germany, Switzerland, Austria, and Denmark took part indicating the event was a great success. The date 19 March was selected because it commemorated the day that the Prussian King promised to introduce votes for women in 1848. The promise gave hope for equality but he failed to keep.

The International Women’s Day date was later on shifted to 8 March in 1913. The UN took initiative for global attention to women’s concerns in 1975 by calling for an International Women’s Year. It organised the First Conference on women in Mexico City that in 1975 itself. Subsequently, the UN General Assembly invited member states to proclaim 8 March as the UN Day for Women’s Rights and International Peace in 1977. The Day intended to eliminate discrimination against women and also to celebrate the women’s movement and struggle for equality. According to the United Nations, the theme for International Women’s Day 2020 is “I am Generation Equality: Realizing Women’s Rights”.  It aims at “bringing together people of every gender, age, ethnicity, race, religion and country”, in a bid to drive actions that will lead to a “gender-equal world we all deserve”.

It is pertinent to mention that International Men’s Day is celebrated on November 19 every year little more than 80 countries.

How to Become a Freelance Paralegal

Even in such a highly competitive field, the opportunity for individuals with a paralegal degree to operate on a freelance basis is a popular choice for recent graduates. Learn about the ins and outs of pursuing a freelance opportunity in this exciting field.
Paralegals are an important part of the legal system. They can do pretty much anything a lawyer can except give legal advice. The profession started in the 1960s as a way to help people at all economic levels gain access to the legal system. Paralegals manage criminal cases, conduct legal research, draft legal documents and provide support to attorneys. Law firms, corporations or government agencies, directly employ many paralegals but there is another path; some paralegals choose to freelance.
What is a freelance paralegal?
A freelance paralegal is a trained professional that is not employed by a single law firm or corporation. Freelance paralegals work for themselves as an independent contractor or with a group of other freelancers in an agency type setting.
Advantages vs disadvantages
Freelance paralegals enjoy control over their own workload and schedule. If you choose to freelance you’ll really be taking your career into your own hands. As a freelance paralegal you are in charge of finding clients, which means your income is heavily dependent on your ability to sell your skills. So, if you’re someone who needs stability and the security of a consistent paycheck becoming a freelance paralegal may not be a good fit.  But, someone with an entrepreneurial spirit will find a match with the world of freelance. Working outside of a law firm means that you will also have a better chance at striking a work/life balance and find opportunities to work on projects of interest to you.
How to become a freelance paralegal

1.Get Paralegal Training

To become a freelance paralegal you need strong training and one of the best ways to get that training is to earn a degree. A degree program will introduce courses on legal research, legal document preparation, and an introduction to the legal system. You can earn a paralegal degree online or through a campus based program but be sure the program you choose has courses that underscore ethical considerations for legal professionals as prescribed by the American Bar Association and the National Federation for Paralegal Associates. Additionally courses should emphasize soft skills development like adaptability, critical thinking, organizational skills and written and verbal communication skills, as these will all be critical to your freelance paralegal career.

2. Get Paralegal Experience

Becoming a freelance paralegal can be difficult for new graduates. Getting work is largely dependent on having a network to go to and offer your services. If you are new to the workforce you may not have built up a list of law firms and companies yet and getting your foot in the door could be a challenge. Plus, once you do get your foot in the door a potential client will likely choose where or not to hire you based on your past experiences and class projects may not be enough to land the job. These are great reasons for new graduates to get a few years of experience inside a law firm or company before breaking out on your own.
As you start your paralegal degree keep the option of becoming a freelance paralegal in mind. You might not be able to jump into the field right away but it’s a good option for anyone who likes to build relationships with people and wants to be their own boss!

How to Get a Job as a Paralegal

Successful paralegals are people who have a passion for the legal field – criminal, divorce, family, estate, or contract law – but prefer not to give legal advice. They love to perform research, complete forms, and keep records. They enjoy working in the back office and providing support. If that sounds good to you, read on to learn all about how to get a job as a paralegal.
Paralegals and legal assistants support lawyers in their daily work:
  • Search, locate, and use information from legal texts, court decisions, and databases.
  • Use critical thinking to read and apply law to litigation and documentation for specialized areas of the law.
  • Draft and prepare a variety of legal documents, including correspondence, memos, working papers, and pleadings.
  • Learn, understand, and use general office and legal specific technology applications to prepare, sort, and archive documents and records.
  • Understand and comply with ethical standards expected of a paralegal.
  • Personal Job satisfaction comes from completing important work driven by deadline and accuracy requirements.
Where to go and how to get your job as a paralegal?
  • Complete your studies as defined by the state where you want to work and the type of law that interests you.
While the requirements for becoming a paralegal can vary depending on where you live and what kind of work you want to do, the first step is almost always earning a degree as a paralegal. An Associate degree in Paralegal Studies at Bryant & Stratton can significantly enhance your ability to acquire the best jobs and prepare you for a wide variety of paralegal opportunities.
  • Prepare a quality resume – no more than two pages – without typos.
Paralegals are expected to help draft important legal documents. A resume with typographical errors may cause a prospective employer to doubt your capacity to do this without making critical errors.
  • Post your resume on job search sites such as Monster, CareerBuilder, and Indeed, as well as networking sites, such as Biznik. There are also job sites specifically for paralegals including the Institute for Paralegal Education Career Center.
Hiring agencies regularly search the profiles of job seekers to fill available paralegal positions. Make sure your resume includes important keywords that these agencies might search for. If you have a degree, make sure to include the phrase ‘degree in paralegal studies’ as this is a term for which hiring agencies are likely to search.
  • Network with professionals in the legal field via social media or through career advisors to spread the word of your interest and to identify prospective employers.
Attending talks or other learning events sponsored by local bar associations or other legal services can give you the opportunity to meet and network with legal professionals. Popular websites for job networking include LinkedIn and Facebook. Join online groups or follow pages related to your area of interest to find potential contacts.
  • Join professional associations such as National Association of Legal Assistants (NALA) and The American Alliance of Paralegals. Better yet, join a local paralegal association that is a member of the National Federation of Paralegal Associations.
Local paralegal associations are great places to network with other paralegals and hear about potential job opportunities. The National Federation of Paralegal Associations features a career center with job postings and helpful information on becoming a paralegal. The American Alliance of Paralegals distributes job information to its members from prospective employers. The National Association of Legal Assistants site features an online networking section where you can meet and compare notes with others in your field.
  • Approach law firms in your area or areas where you want to work with a brief cover letter emphasizing the skills and abilities that match their needs. Include your resume and a letter of recommendation from one of your paralegal studies instructors.
  • Find paralegal internships (some are paid) through professional associations, online or by word of mouth.
Law firms and non-profits do not generally advertise Paralegal Internships heavily. Such openings are more likely found listed by local paralegal professional associations, job sites, or through websites like Internmatch.com. While some internships are paid, many are not.  However the experience is invaluable and provides a “foot-in-the-door” in many cases.
Do not underestimate the expectations of the professional world.
  • Arrive early for an interview and hold a friendly discussion with the receptionist.
  • Dress simply but conservatively. Reduce the visual distractions of too much jewelry, piercings, extreme hairdos, or loud clothes.
  • Reduce your makeup, perfumes, or cologne.
  • Interviews depend on eye contact; don’t let your nails or accessories distract.
  • Carry a portfolio or folder for your resume.
  • Practice your handshake and sitting forward.
  • Develop and answer to the request, “Tell me something about yourself.” That answer should summarize your skills and abilities not your personal life.
A career as a paralegal helps people fulfill their career dreams of becoming a semi-professional. CNN Money lists Paralegal among its top 20 job opportunities for those who want to make money or change their career, and Business Week lists it as #23 among Public Service Jobs.
Job Outlook for those with Paralegal Certificates:
The U.S. Department of Labor Bureau of Labor Statistics (BLS) projects an increase in demand for paralegals of 18% by 2020. They list the median annual salary at $46,800 (or $22.40/hour) with good potential for growth. Fully educated Paralegals can earn more income and prestige as they move into Legal Assistant positions offering legal services to groups and organizations that do not want to budget a lawyer.
Paralegals benefit from a sense of professionalism in and out of the office, the benefits of solid and productive employment, and participation in a larger community. Apply to Bryant & Stratton College to take the first steps towards getting a job as a paralegal by earning the Associate Degree in Paralegal Studies.

Oaxacan Cuisine in Transition

By Cynthia Belliveau, Ed.D., Dean of Continuing and Distance Education
An Interview with Julieta Salazar Robert at Villada in Oaxaca, Mexico
It’s that time of year again when UVM’s Oaxaca Study Abroad program starts and a curious bunch of undergraduates, from many different majors, come together to learn about Mexico’s past and present history, politics, language, culture, art, and best of all for me, its incredible food.
This year, the students’ first four days are in an acclimatization retreat at La Villada Inn about 20 minutes up a steep hill outside of the City of Oaxaca. A picturesque location with views down the valley and up into the majestic and very high, Sierra Norte Mountains.
Oaxaca is a state in Mexico and its capitol is formally called Oaxaca de Juarez, which is where UVM’s program is based. The city has approximately 100,000 inhabitants and is known for its fine and artisanal art as well as for its beauty, a mile high up in the Sierras. Far from the troubled border, Oaxaca is a haven of artists and interested foreigners curious about this special place.
Each day, at La Villada, the students and faculty discuss an aspect of Mexico, with a focus on the State of Oaxaca and its 16 indigenous groups that have resided here for 10,000 years. The place is rife with archeological digs; anthropological field work in local traditions and customs; and food systems research.
Which brings me to why I am writing about our experience in La Villada.
Each day we were treated to three meals and two snacks (a lot when you’re just sitting in a chair all day). The owner/chef Julieta Salazar Robert and her daughter, also Julieta, along with three other women, prepared the day’s meals. Traditional Mexican meals go like this – a somewhat hearty breakfast of a combination of tortillas and eggs and salsas. In this case, we also were treated to the Mexican version of pancakes (hotcakes topped with honey and jam). At lunch, or comida, the big meal of the day served at around 2:00 pm, we started with light clear broth soup with vegetables, followed with a main course of a chicken or pork in a mole sauce with rice or potatoes and always the requisite fresh tortillas. The meal concludes with a light fruit dessert. Dinner, or cena, is usually something lighter, a tlayuda (pizza like crispy tortilla disc topped with tomatoes, cheese, avocado and salsa) or sandwiches.
I have eaten in many Mexican restaurants and although almost all of them are excellent because most Mexican cooks still have intact knowledge about how to prepare food, La Villada, was really exceptional. The students and I began to anticipate each meal with high expectation. I began sneaking into the kitchen to watch these women cook. I started asking questions about technique. At first, they seems surprised that some gringa would be interested but over time, they began sharing their methods.
On the last day, I asked Mama Juileta if I could interview her about her kitchen and she agreed.
Through my translator, Claire (my Spanish is very elementary), I asked her the following questions:
oaxacan-cuisineQ: Juileta, please tell me about yourself.
A: I’m 66 years old. I have three children and five grandchildren and brothers and sisters who all live either here at the Inn or near me. I was born in Oaxaca and married my husband, who lived down the road growing up and who I was married to for 40 years (he passed 4 years ago). I have lived in La Villada for thirteen years now.
Q: When did you start cooking?
A: I started cooking at eight years old with my mother who allowed me to make Sopa Caldosa (basically chicken noodle soup). I grew my skills from there. My mother and her mother, and her mother before, were all very interested in cooking and were known in their villages for their skills.
Q: If you were to say what your favorite dish is to make, what would it be?
A: Estofado for sure! It’s a mole with almonds, sesame seeds, onions, fried bread, raisin, thyme, oregano, marjoram, almoraduz (a minty thyme smelling small-leaved herb) (she told me these four herbs are considered the central aromatic herbs of Oaxaca) cumin, basil, cloves, black pepper,cumin1 capers, canella (cinnamon), garlic, tomatoes, tomatillos, chicken, pork and beef broth, bay leave, olives, pickled red pepper strips (serrano), whole chicken, and salt. I serve this dish over white rice*. It’s just delicious and the aromas are incredible as it simmers all day in my house.
*She gave me great detail about her preparation which I was unable to write fast enough but have included a recipe below that I have made with my students in our Oaxacan kitchen here in the city.
Q: How do you decide on the recipes for your Inn?
A: I decide based on who is coming. If it is a group (which is usually the case since they are not on the beaten path for individuals to find it). If they are gringos, we usually prepare things that Americans like as they are not usually adventurous eaters. I make American food of hamburgers, sandwiches, spaghetti, maybe some beans and rice but not too spicy.
But, if I get a group like yours that asks for Mexican food, I make the traditional fare of Oaxaca. Different moles (traditionally seven moles, or sauces), taquitos (fried rolled stuffed tortillas), tortas (basically subs stuffed with Oaxacan cheese, and grilled with meat, avocado, and tomatoes, and salsa), tamale (sweet and savory), and lots of others.
Q: Have you seen changes in your 66 years in ingredients and the way people eat?
A: Ah! Yes! Meat is not as fresh as it used to be. I used to be able to go to the market and chickens were alive. The pork and beef was just slaughtered at the local farm. Now the meat comes in packages from the grocery store from Puebla. I watch my children and their children not want the food of Oaxaca but would rather eat American pizza, hot dogs, hamburgers, and chips – chatarras!! (junk food). There is less interest in cooking. My daughters don’t want to cook, they want to get take-out. I see serving sizes getting larger! Everyone’s getting fatter! The young women who cook with me, watch cooking shows and want the food to look fancier – something I never thought about.

Q: Do people still eat with in the seasons? Or has that been forgotten too?
A: No, we still eat with the seasons. For example, there are no mangoes right now, and will not be available until March. We pay careful attention to seasons because we have so much choice here in Oaxaca.
Q: Do you think Oaxaca has the best food in Mexico?
A: Oaxaca is known for its food. Jalisco and the Yucatan are also known for their food. In DF (Mexico City) they have an annual food competition and Oaxaca almost always wins. But I also see, now that so many people have to go find work in the States, that our cuisine is changing some. People are bringing back some of the American food like spaghetti which I think is horrible. Yes, Yes, I know it comes from Italy but it is coming here by way of the States and my grandchildren love it – terrible!
Q: I really liked the tortillas you served and noticed that they were not factory made which is hard to find these days. Where do you get them?
A: This has really changed. When I lived in the center of the city – the tortillas were made by hand by several little stores around the area. Now it is all by machine and not with nixtaml (the freshly ground soaked heritage corn method) but Maseca (brand name of industrial grown ground dehydrated corn, that is softer and less tasty). I was told when they make the Maseca, they grind the cob and everything into it the mix! You can still get the good tortillas but the price has really gone up. Today the factory tortillas are about 12 pesos ($1.00 USD) a 1 kilo (about 23 in all) and for the handmade tortillas, 12 pesos will buy you about four tortillas. Since most people who eat at my Inn don’t know the difference – we buy them the factory ones.

It was getting time to go, the van was packed and everyone was taking pictures and saying their goodbyes. I was closing up but having talked to her for the week and each time noticed that Juileta was missing her right arm. I asked how this accident had happened. She told me that when she was 20, on her way to the coast (about 6 hours of harrowing narrow roads), the truck she was in with 30 other young people rolled down the side of an embankment. Her arm was broken but because she was in such a remote place, it was not tended to, became gangrenous weeks later, and eventually had to be amputated – her right arm and she was right-handed.
She got tears in her eyes as she said that although it was a horrible situation, she was able through the tragedy to find her true love. She related that at the time of the accident, she had many novios (boyfriends) and after the accident none stayed except for one. When he came to her hospital bed, he carried a bouquet of roses, looked her in the eye and said, “I love you Juileta, not because you are a tortilla maker”. She said that although her one hand is extremely sore at this stage in her life (she reminded me that her left has not performed 40 years of work but 80 because it has had to do double duty), she is able to still cook every day, knit (29 scarves this Christmas using her left armpit to hold the other needle), and enjoy her wonderful life.
Abrazos Julieta.

Recipe: Estofado Verde
This recipe has Mediterranean accents like capers and almonds which are typical in much of Oaxaca City cooking.
Serves 6
Ingredients:
  • 1 C Sesame seeds (about 5 ounces)
  • 2 lbs. Tomatillos, with husks
  • 2 medium onions, unpeeled
  • 6 large garlic cloves, unpeeled
  • 6 8-ounce center loin pork chops with ribs
  • Salt/pepper to season pork
  • 2 Tablespoons vegetable oil
  • 1/2 piece of canela stick (or cinnamon stick)
  • 1/8 teaspoon ground cloves
  • 2 sprigs fresh thyme (or ¼ teaspoon dried)
  • 2 sprigs fresh Mediterranean oregano (or ¼ dried)
  • 3 Tablespoons capers, drained
  • 1/2 C Pimiento-stuffed green olives (1/3 jar)
  • 1/2 C Blanched almonds
Directions:Place the sesame seeds in a heavy medium-sized skillet over medium heat. Toast just until golden brown (about 1 minute), stirring constantly and shaking the pan, immediately scrape out into a small bowl and set aside.
Griddle-roast the tomatillos by placing them on a dry medium-hot griddle surface. Cook for 10 to 15 minutes turning as they cook. Place in a bowl and allow to cool, collecting all the juices. Roast the onions and garlic in the same manner.
Season the pork chops with salt and pepper. In a large Dutch oven, heat the oil over high heat until rippling. Quickly brown the chops, 2 or 3 at a time allowing about 2 minutes per side. Remove to a platter as they are browned and set aside. If more fat has accumulated in the pan, pour off all but about 2 tablespoons; set aside.
When the roasted vegetables are cool enough to handle, remove the husks from the tomatillos over a bowl to collect the juices. Peel the onions and garlic. Working in batches as necessary, place the vegetables in a blender with the reserved sesame seeds, canela, pepper, cloves, thyme and oregano. Process to a puree (about one minute on high).
Over medium-high heat, reheat the reserved fat in the Dutch oven until rippling. Add the pureed sauce and bring to a boil. Stir in the capers, olives, and almonds. Return the pork chop to the pan, reduce the heat to low, and cook covered, until the meat is tender, about 15-30 minutes. Serve over rice

7 Tips to Improve Time Management

As a business professional, you may often find yourself pressed for time as you strive to accomplish your professional goals. Below are seven strategies for time management that will help you avoid burnout and increase productivity.
1. Be the master of your schedule. Set aside administrative or “work” time for you to accomplish necessary research or procedures. Use your calendar to your advantage. Set specific time every day (or weekly) to focus on administrative tasks, set weekly meetings at the same time, and plan your meetings with location in mind. Give yourself a 10 minute walk outside between offices or factor in the 20 minutes to prepare for a marketing pitch.
2. Evaluate your time. What elements are you allowing to take over your day? How do you filter or flag your emails? Are you spending hours following news and social media? Consider using time-saving tools like only responding immediately to emails that require less than 2 minutes of your time and flagging more time-consuming emails for follow up. Explain yourself clearly in the first email to avoid clarification email chains that take up time and energy. Apply filters to prevent your email from overloading or crashing. Subscribe to a consolidated daily news update either through your email or social media. Set limits on the amount of time you can allocate to social media, and only post content to social media platforms that align with your business goals and audience.
3. Take breaks! Reward yourself with a little time. Last year, the Internet smiled when Japanese researcher Hiroshi Nittono found that “participants performed tasks requiring focused attention more carefully after viewing cute images.” (Read the full article here.) Companies like Google and Facebook have tapped in to what we already know to be true: making the time for reflection and creative, collaborative-thinking enables greater focus and innovation.
4. Sleep, exercise, and eat well. This goes without saying. Measure the quality of your work when you’re tired or hungry, and you’ll notice a difference. You’ll feel better about yourself and you’ll perform better when you take action so that these three elements align. Taking care of yourself in these three areas will prevent you from taking sick days and getting behind on your work. Your colleagues will also probably notice a marked difference when you are a good model of self-care, and it will give them tacit permission to take better care of themselves.
5. Seek out professional development opportunities. Take a leadership management course. Build your network of professional contacts. While you’re learning in the course, you’ll also build your network of people who can support you through difficult times or provide tips on a more efficient work style. You’ll stay up-to-date on best practices and likely incorporate new technologies that will make your day-to-day work more efficient and effective. Your colleagues will see you as a thought-leader and an active implementer of change and ideas to meet your business goals.
6. Recognize your needs. Take a lunch break or go for a brisk walk every day. As you make a habit of taking care of yourself, your colleagues will respect your practice and may even join you. In stressful times, it may be more important to take a day off and avoid having a meltdown at the office.
7. Utilize your company’s resources to your benefit. Many companies provide an Employee Assistance Program (EAP), so you can talk to a specialist who can support you in making lifestyle changes to benefit your health and wellbeing. Companies may also provide additional training and support for professionally engaged employees. Seek out a relevant leadership or management training program to meet your needs.
By using these seven strategies, reflect upon your current use of time and how it aligns (or diverges from) your goals. By applying each of the steps and engaging critically with the projects that make up your daily routine, you’ll be an active director of your work and your professional goals. With active application of these time management strategies, you’ll be more able to take on the projects that will meaningfully impact your work and build your success

Struggling in a Class? We’re Here to Help!!

Life can get in the way of success for a student. One day away from the books might turn into a week. And suddenly, you can find yourself not just falling behind, but failing.
The key to recovery after any roadblock you face in class is to keep in contact with your academic advisor and, or, your academic success coach, as well as your instructor. Working double shifts this week? Let them know. Death in the family? Let them know. Kids come home from preschool with lice? Let them know. They can adjust your due dates for assignments accordingly. And if you are not contacting them, they will reach out to you.
“Our advisors and academic success coaches work closely with our students, especially those who are in their first term,” said Brandy McDonough, associate dean of instruction. “If something seems amiss they will contact the student and support them to get back on track.”
Each instructor will have their policies late assignments listed on the class syllabus. However, McDonough said students who are facing a hardship need to be proactive. Instructors are willing to work with students who communicate when they have an issue.
“The biggest point is that students need to know the importance of being as proactive as possible and reaching out to their instructor right away if know they have a conflict,” McDonough said. “If all of a sudden life got in the way and they need additional time they should immediately reach out to their instructor.”
Students also need to check their Bryant & Stratton issued email address on a daily basis. Instructors will not respond to emails from outside providers. All staff members communicate with students through Bryant & Stratton email and through the online blackboard system. If you are struggling in a class because you need more instruction, Bryant & Stratton College has opportunities for you.
Faculty members are able to work with students one on one during virtual office hours, or, you can schedule a meeting. Tutoring is available as well. Once you’ve realized that you need more help in a course, your best action is to get that help. Students can only add or drop a course in the first seven days of the session without penalty.
On day eight, if you decide you are not ready for the course, you need to make it work. That’s because on day eight, you are responsible for the cost of the class. If you drop the course anyways, you may also lose some financial aid benefits.

HOW TO BE A PROACTIVE MANAGER

Years ago, I shadowed a night manager at a large grocery store chain. She didn\’t sit down a single time during her entire eight hour shift. She tackled problem after problem, putting out fires. I was completely exhausted by the end of it, and asked her how she did it. She said, \”Well, I\’ve been here six months and I\’ve lost 20 pounds without dieting.\”
The reason why her shift was so chaotic was that she was managing by being reactive, rather than proactive. To some extent, this is inevitable because of the role—you never know when a customer is going to throw a fit because you\’re out of her favorite dog food, or when a delivery truck will come in late. Still, there are ways to prepare for some disasters.
Many of us spend far too much time being reactive rather than proactive managers. If we can maximize how often we think proactively, our lives—and our customers\’ lives—become easier. Here\’s how to make the switch:

Anticipate What Will Happen

Managers aren\’t gifted a crystal ball when they accept the position, but we have the next best thing: data. Data can provide insight into recurring patterns, and better prepare managers for upcoming challenges before they manifest.
If John has come in late six times in the past two months, you can bet that he will come in late next month as well. You can wait until he comes in late again to talk with him, or you can sit down now and figure out what the problem is, and if there is a solution.
It\’s tempting to simply say that the problem is John\’s lateness and the solution is to reprimand him continuously. But that\’s the type of thinking that gets you into a reactive rather than proactive management mode. Instead, sit down with John and find out what is going on. It could be that:
  • There\’s construction along his commute that can be quite unpredictable
  • On Tuesdays, his wife has to be at work early, so he has to get the kids on the school bus. More often than not, this means he\’s late.
  • His clients are on the opposite coast, so he finds it silly to be in at 8:00am when they aren\’t going to be in the office until 10:00am.
  • John is a slacker and this isn\’t his only problem.
For each one of these problems, there is a different solution. To address the first, John just needs to leave earlier. To solve the second, you could consider adjusting his schedule so that he starts 30 minutes later on Tuesdays. The third requires a reassessment of his schedule and the fourth might mean that it\’s time to let him go.
This proactive management style, predictive thinking doesn\’t only apply to lateness. For example, based on previous experience, you\’ve learned that the Senior Vice President is always going to have last minute changes to projects, so add time for those into the timeline. And, draw from structured data sources such as performance reviews or employee surveys to anticipate problems or tough conversations that may arise with specific employees.
If you sit down and look at the past fires you\’ve put out, you\’re very likely to find that the same fires start over and over again. Creating a plan for each one will prevent the sparks from turning into full on blazes.

You Can\’t Stop Every Fire, But You Can Hire a Fireman

Even armed with the best data, it\’s impossible to predict everything that can go wrong. There\’s no way for a night manager to prevent all customer complaints, or ensure that no one ever drops a jar of pickles, and it\’s impossible to foresee the next time a shoplifter will try to sneak Diet Coke out the door. So, build that uncertainty into your plan.
You know that these fires will happen, but you don\’t know which ones and at what times. To avoid falling behind on crucial tasks, be mindful about time management. Don\’t leave all your monthly paperwork until the last minute, and get frustrated when you get pulled into other tasks. You know this happens on most nights, so be prepared.
Approaching your management tasks in this proactive manner takes the frustration out of it. These \”fires\” aren\’t stopping you from doing your job. These fires are your job. It\’s a tough job, but if you\’re mentally prepared for it, and that alone reduces stress.
Take a minute to stop and analyze what you can

Career Prep: Developing a Professional Portfolio for Job Interviews

Anyone will tell you that you need to have a well-polished resume in order to score a job interview. But while most candidates will spend the time it takes to build a solid resume, many fail to prepare for the interview itself. A resume only gets your foot in the door. An employer will meet with several candidates in order to find the right person for the job, and it’s important to set yourself apart from the competition.
How do you stand out?
In order to stand out, a job candidate needs to be prepared to communicate what value they will bring to an organization. In addition to having the technical skills to do the job, an individual needs to demonstrate their skills in communication, teamwork, critical thinking and problem solving. These “soft” skills are just as important as the technical skills you learn in a degree program.
How do you display these skills and qualities during a job interview? One of the best ways to prove your abilities to a potential employer is to create a professional portfolio. Pulling together examples of your past work and experience is a great way to show, not just tell, an employer that you are fit for a job at their company.
What should you include in a portfolio?Man getting interviewed
Building a portfolio for a job interview on your own may seem like a daunting task. That is why it is helpful to find a degree program that incorporates professional development into the curriculum. At Bryant & Stratton College, online degree programs include instruction on how to build your professional portfolio, as well as how to use it to your advantage in an interview. Knowing how to call out the skills and qualities that differentiate you from other candidates is just as important as having the portfolio itself. Bryant & Stratton College students are also required to have their portfolio reviewed by an outside professional who works in their industry of interest as part of their graduation requirements.
The items you choose to include in your portfolio will vary depending on the industry in which you are pursuing a job.  Still, here are a few common elements you will find in a good portfolio:
  • Education history – Provide copies of your transcripts, diploma and documentation for any internships or apprenticeships you completed during your college career.
  • Work samples – This section of your portfolio may include writing samples, presentations, and projects you worked on for school, an internship or a past job.
  • Volunteer and Extra-curricular activities – Be sure to highlight any activities that may be relevant to the job for which you’re applying.
In most cases, employers will not require candidates to submit a portfolio. This is exactly why you should bring one to an interview. Doing so will make you stand out from the other candidates, show the interviewer that you go above and beyond what is asked of you, and serve as a valuable tool for displaying your skills and qualifications.
